Greek Chicken Cauliflower Rice Bowls


    2 lb chicken breasts pounded thin
    1 cup kalamata olives sliced in half
    1 cup marinated artichoke hearts
    1 cup cherry tomatoes halved
    2 teaspoons fresh rosemary chopped (divided)
    1 teaspoons dried oregano (Divided)
    2 teaspoons fresh thyme (divided)
    2 tablespoons olive oil
    1 teaspoon pepper
    1/2 teaspoon salt

Greek Chicken Cauliflower Rice Bowls


  • Heat two tablespoon olive oil in a very giant pan on the stove. Season chicken with one tsp of recent thyme, one tsp recent rosemary, 1/2 tsp oregano, 1/2 tsp pepper, and 1/2 tsp salt
  • Once oil is hot, place chicken within the pan. Sear chicken in vegetable oil for 6-7 minutes on all sides till golden brown
  • Once chicken is soft-bo, take away from pan + put aside. Add in cherry tomatoes to hot oil that's already within the pan.
  • Sauté the tomatoes for 5-6 minutes till soft. Add in three cups cauliflower rice, artichoke hearts, olives + remaining spices. Stir to mix. Sauté for 3-4 minutes on low heat till cauliflower rice begins to melt.
  • take away cauliflower rice from pan + boost bowls. Slice chicken and boost the highest.
